Abstract:
ÖZET
Bu çalışmada, kurutma işlemi esnasında gerekli olan enerji ihtiyacının azaltılmasına yönelik ısı borulu düzlemsel güneş kollektörlü ve ısı geri kazanımlı bir kurutma sistemi tasarlanmıştır. Tasarlanan kurutma sistemi; Karabük ili iklim şartlarında, sabit 1 m/s kurutma hızında, farklı ışınım değerlerinde, kuruma havası sıcaklığının değişimleri, ürün kütle kaybı ve kalitesi, ısı geri kazanımının sisteme katkısı deneysel olarak incelenmiş ve teorik analizleri yapılmıştır. Sistemde kapalı çevrimde içerisine ürün konulmadan yapılan deneyde sabit hava hızında ve ortalama 770 W/m2 ışınım değerinde kurutucu sıcaklığının dış hava sıcaklık değerinin yaklaşık olarak %49’luk bir artışla ortalama 14.63 °C üzerine çıktığı belirlenmiştir. Kurutma sisteminde 5 mm’lik dilimlenmiş 200 g kivi kullanılmıştır.
Etüv fırınında kurutulan kivilerde yaş baza göre hesaplanan nem miktarı 0.83 g su/g yaş madde, kuru baza göre hesaplanan nem miktarı 4.94 g su/g kuru madde ve kuru madde miktarı %16,8 olarak belirlenmiştir. Kurutma işlemine, son üç ağırlık değeri eşit çıkana kadar devam edilmiş ve nem değeri 0.17 g su/g yaş madde olana kadar kurutma gerçekleştirilmiştir. Deneyler sonucunda ortalama 39.4 g değerine kadar kurumanın gerçekleştiği ve ürün ağırlığının %80 azaldığı belirlenmiştir. Sistemin genel verimi 4 Eylül saat 15:50’de 694,3 (W/m2) ışınım değerinde maksimum %39, ısı borulu kollektörün ortalama verimi %24 ısı geri kazanım ünitesinin verimi %28’dir. Kurutma işleminde harcanan enerjinin %27 sini ısı geri kazanım ünitesi, %73’ü de ısı borulu kollektör tarafında karşılanmıştır.
ABSTRACT
In this study, a heat recovery drying system with heat pipe, planar solar collector and heat recovery was designed to reduce the energy requirement during the drying process. Designed drying system; Changes in drying air temperature, product mass loss and quality, contribution of heat recovery to the system were experimentally examined and theoretical analyzes were made in Karabuk climatic conditions, constant drying rate of 1 m/s, different irradiation values. In the experiment, which was carried out in the closed cycle without putting the product inside the system, it was determined that the dryer temperature increased to an average of 14.63 °C with an increase of approximately 49%, at a constant air speed and an average irradiance value of 770 W/m2. In the drying system, 200 g of 5 mm sliced kiwi was used. In the kiwis dried in the oven, the moisture content calculated according to the wet base was 0.83 g water/g wet matter, the moisture content calculated according to the dry basis was 4.94 g water/g dry matter and the dry matter amount was 16.8%. The
drying process was continued until the last three weight values were equal and drying was carried out until the moisture value was 0.17 g water/g wet matter. As a result of the experiments, it was determined that the average drying rate was 39.4 g and the product weight decreased by 80%. The overall efficiency of the system at 15:50 on September 4, at an irradiance value of 694.3 (W/ m2), is maximum 39%, the average efficiency of the heat pipe collector is 24%, and the efficiency of the heat recovery unit is 28%. 27% of the energy consumed in the drying process was met by the heat recovery unit and 73% by the heat pipe collector.
