Abstract

ÖZET

Bu çalışmada, kurutma teknikleri araştırılarak dondurarak ve vakumlu kurutma yöntemleri karşılaştırılmıştır. Her iki yöntem de son yıllarda kullanılan kurutma yöntemi olup, dondurarak kurutma yöntemi, ürünlerin raf ömrünü uzatması ve içeriğindeki faydalı aromaları koruması nedeniyle en sağlıklı kurutma yöntemi olarak gösterilmiştir. Çalışmada safran gibi çok pahalı tarım ürünlerinde dondurarak kurutmanın daha verimli olduğu belirlenmiştir. Ayrıca, dondurarak kurutma tekniği, vakumlu kurutma yöntemiyle kapasite karşılaştırmasında daha iyi sonuçlar vermiştir. En iyi sonuç almak adına vakumlu kurutma ile dondurarak kurutma yöntemlerini hibrit şekilde kullanabiliriz.

ABSTRACT

In this study, drying techniques were investigated and freeze drying and vacuum drying methods as drying methods were compared. Both methods are the drying method that has been used in recent years also freeze drying method has been illustrated as the healthiest drying way, as it extends the shelf life of the products and preserves the beneficial aromas in its content. In the study, it was determined that freeze-drying is more efficient in much expensive agricultural products such as saffron. Moreover, freeze-drying technique has depicted better reults in order the capacity comparison with vacuum drying method. In order to get the best results, we can use a hybrid of vacuum drying and freeze drying methods.
