Gastronomi Turizmi Ürünlerinin Geliştirilmesi ve Çeşitlendirilmesi: Safranbolu Üzerine Bir Araştırma

Hem bir bilim hem de bir sanat dalı olarak kabul edilen gastronomi, birçok sektörü etkilediği gibi turizm sektörünü de pozitif yönde etkilemektedir. İnsanlar doğası gereği bulunduğu her yerde yemek yeme ihtiyacı içerisindedir. Günümüz teknoloji ve modern gelişmeleri sonucunda ise; iyi yemek yeme, farklı tatlar keşfetme gibi ek ihtiyaçlar oluşmaya başlamıştır. Bu durumda, gastronomi alanındaki gelişmeleri desteklemektedir. Yemek için seyahat etme motivasyonu gelişen kişiler bu doğrultuda turizm faaliyetlerine katılmaktadırlar. Bu nedenle çalışmada; Gastronomi turizmi ürünlerinin geliştirilmesi ve çeşitlendirilmesi Safranbolu konumu ölçeğinde değerlendirilmiştir. Safranbolu tarihi geçmişi nedeniyle yöresel bir yemek kültürüne sahiptir. Tıpkı tarihi yapılarının korunması faaliyetleri gibi yöresel yiyecek ürünlerini de koruma altına almak için coğrafi işaret belgesi alınması için gerekli çalımalar sürdürülmektedir. Mimari dokusu ve yapısının yanı sıra yöresel yiyecek içecek ürünlerinin de daha fazla ön plana çıkarılmaya ihtiyacı vardır. Safranbolu isminde de yer alan safran bitkisi destinasyon imajına katkı sağlayan önemli bir figürdür. Ayrıca bu coğrafya da yöreye özgü yetişen ürünler ile bu ürünlerden yapılan yöresel yiyeceklerin daha fazla ön plana çıkartılıp değerlendirilmesi oldukça önemlidir. Yapılan araştırma sonucunda ulaşılan verilerde; Safranbolu yöresine ait yemek ve yiyecek içeceklerin turizme kazandırılmaya çalışıldığı tespit edilmiştir. Fakat bu faaliyetlerin geliştirilip çeşitlendirilmeye ihtiyacı olduğu görülmüştür. Bu amaçla atılan adımlar olması, Safranbolu ilçesinde ki hem gastronomi hem de turizm faaliyetlerinin gelişimi için oldukça faydalı olacaktır. Bu alanda çeşitli öneriler sunulmaktadır.

Gastronomy, which is accepted as both a science and an art branch, affects the tourism sector positively as it affects many sectors. People naturally need to eat wherever they are. As a result of today's technology and modern developments; Additional needs such as eating well and discovering different tastes have begun to emerge. In this case, it supports the developments in the field of gastronomy. People who have the motivation to travel for food participate in tourism activities in this direction. Therefore, in the study; The development and diversification of gastronomic tourism products has been evaluated on the scale of Safranbolu location. Safranbolu has a local food culture due to its historical past. Just like the activities for the protection of historical buildings, the necessary studies are carried out to obtain a geographical indication certificate in order to protect local food products. In addition to its architectural texture and structure, local food and beverage products also need to be brought to the fore. The saffron plant, which is also named Safranbolu, is an important figure that contributes to the image of the destination. In addition, it is very important that the products grown in this geography and the local foods made from these products are more prominent and evaluated. In the data obtained as a result of the research; It has been determined that the food and beverages of the Safranbolu region are tried to be brought into tourism. However, it has been seen that these activities need to be developed and diversified. Taking steps for this purpose will be very beneficial for the development of both gastronomy and tourism activities in Safranbolu district. Various recommendations are offered in this area.
